Foody Thursday - Chocolate Truffle Cake

Just imagine one ginormous, cake-size chocolate candy! This is precisely what this cake is - chocolate layers, chocolate filling, home-made chocolate truffles for decorations. The biggest challenge is to find good quality chocolate. I used to use President's Choice chocolate chips before, but does not seem like they contain any cocoa powder or cocoa butter anymore. Last time I tried it - it tasted like caramel and looked like caramel while being melted. Had to toss the entire thing away and go find real chocolate....

Lets get started!

Butter:

Step 1:
6 egg whites
1 tsp white vinegar
1/3 cup sugar
Beat with the mixer till steady peaks

Step 2:

6 egg yolks
1/3 cup sugar
Beat till the mixture starts turning whitish and all sugar dissolves
Yolks and whites
Step 3:

2 tbsp cocoa powder
4 tbsp boiling water
Mix well


Step 4:

Add together mixtures from steps 1,2 and 3 and fold carefully. Add 2 tbsp corn starch and 5 tbsp all purpose flour. Fold in the flour

Step 5:

Draw 8 circles of about 20 sm in diameter on the baking paper and line cookie sheets with the paper. I usually get 2 circles per sheet

Step 6:

Spoon ready butter directly onto the paper and spread to fill in the circles. Bake at 190C for about 5-8 minutes. Remove baked layers from the paper while still hot and set aside

Step 7. Filling

2 cups whipping cream
150 gr chocolate
Heat in the microwave till chocolate melts - about 3 minutes. Or use your "Melt Chocolate" function. In abut 1 minute of heating, take the bowl out and stir well. Refrigerate for 2-3 hours and whip till steady peaks

Step 8. Chocolate Truffles

150 gr chocolate
1/3 whipping cream
Heat in the microwave till chocolate melts, stir well and refrigerate for 2-3 hours. Form truffles using a teaspoon, place in a freezer for 10-15 minutes, dip in melted chocolate.

Step 9: Assemble the cake

Spread filling on each layer, repeating for all layers. Cover the top and sides of the cake. Decorate with truffles or chocolate dipped fruit as an option. Enjoy!
